Soft Boiled Eggs
I actually don't love soft boiled eggs but I do love sticking pins in things that shouldn't have them. And yes, that is an egg, a pin, and the unmanicured hand of boy #2. The lovely wife enjoys soft boiled eggs, and so, in short order cook mode, I made several for breakfast this morning. Its actually quite easy to do. The recipe has one ingredient, and all you need is a pot, a pin, a bowl of ice water and a timer. Of course, really fancy people would have egg holders, but this is male martha.
Take extra large eggs. Push the pin about a 1/4 of an inch into the big part of the egg. This will prevent cracking during cooking. Boil water. You should have about 2 quarts for 4 or fewer eggs. Add a quart or so for each additional 3 eggs. More is better, as the water will reboil faster if there is more of it. Carefully place eggs in boiling water and leave for 5 minutes. Stick immediately in an ice water bath to stop cooking and cool down somewhat (I would keep it in till you can comfortably touch the egg). Then put the egg BACK in the boiling water for 10 seconds. This will make it easier to crack!
Serve with salt in fancy little egg cups (if you are not me).

First of all, the fingernails on boy number 2 are just appalling and I am reporting you.
However, I NEVER knew the pin trick for the egg and am very excited to try this at home.
Any thoughts on poached eggs. Every time I try, I get very runny whites. I have tried acidulated water, but still no good. Do not want to resort to a poacher inset.
Any suggestions welcome.
