D'artagnan Bacon


Ah, Sunday Bacon. Clearly a theme in the Male Martha Household. We have been going through a variety of premium bacon every Sunday; premium being defined as:
  • more money (natch)
  • No added nitrates or nitrites
  • No antibiotics
Last week, we had (on Saturday, I admit) Applegate Farms Sunday Bacon which all four of us thought was exceptionally good. It is also readily available. This Sunday, the lovely wife bought D'artagnan Uncured Applewood Smoked Bacon at Zabar's on her way back from the gym (and no, the irony of that sentence is not lost on me).

D'artagnan, for those of you who don't know, is a purveyor mostly of fine meat products, including an excellent foie and a variety of duck products. If its an animal, they sell fancy pieces of it to eat, and they do a great job of this.

And their bacon is good. But, in a 4 out of 4 consensus, not as good as the Applegate Farm bacon. It cooked a little less evenly, was a little bit chewier, and was more heavily smoked. It is not grossly oversmoked, so if you like a smoky flavor you might prefer this brand. The bacon was sliced nice and thick for commercial product however, which I liked as the cook.

So, our bacon quest continues. If anyone has any brands that they think we should try, let me know: with a post.
