Yerbera Goat: An Excellent Goat Cheese

I admit that I bought this cheese because it looked cool. Yerbera goat cheese is from the Murcia region of Spain, made from the milk of Murciano-Granadina goats and aged 25 to 45 days. The cheese itself is a pure milky white, almost translucent. It is coated in a mixture of almonds and olive oil, which anyone who has had a Spanish Marcona almond knows, is delicious. The piece of cheese looks absoultely beautiful on a plate.

And it tastes good, too! The cheese is firm and crumbly, a softer version of ricotta salata. It is not overly goaty, but it does have a very tangy taste. It was great with crackers and with a bit of fig spread. Yerbera is a great addition to a summer cheese plate.
