No Grate Latkes for Next Year
Ah, its Christmas eve. Time to think about the movie and Chinese food that we will be having tomorrow. Thus year, its also a time to note how the vagaries of the lunar calendar meant that Chanukah has actually been over for several weeks. But Latkes recipes never really go away, and thanks to Lauren in Connecticut (from where I write this), there is now a new way I have learned to make them. It continues on my theme this year of using new potatoes rather then Baking potatoes, and it is the first latkes recipe I have ever used that does NOT require the use of a grater. You will need to get parchment paper or wax paper, however.
INGREDIENTS
Small new potatoes
salt
olive oil
EQUIPMENT YOU WILL NEED
Pot to boil potatoes in
Jelly roll
parchment or wax paper
wooden spoon
INSTRUCTIONS
Boil the potatoes until soft, which can take 15 to 30 minutes, depending on size. You should be able to stick a fork in them easily. Meanwhile, preheat the oven to 450 degrees. Cover the jelly roll in parchment paper.
When the potatoes are cooked, place them on the parchment paper, and smash them down with a greased wooden spoon. Flat is fine, but they should stay as "one piece." Drizzle in olive oil and salt to taste. Bake in oven (about about 30 minutes depending on size) until brown. Serve immediately.
Although I have not tried it, it seems reasonable if you boiled the potatoes early in the day for quicker preparation.
